This salsa combines the rich, earthy notes of Mole Chili Rub with fresh ingredients for a unique take on classic salsa!
Ingredients:
4 medium tomatoes (or 1 can of fire-roasted tomatoes, drained)
1/2 medium onion, roughly chopped
2 cloves garlic
1 small jalapeño (seeded for less heat, optional)
1 tablespoon Mole Chili Rub
1/2 teaspoon smoked paprika (optional, for extra smokiness)
1 tablespoon fresh lime juice
1/4 cup fresh cilantro leaves
1/2 teaspoon salt (or to taste)
Instructions:
Roast the Ingredients (Optional):
If using fresh tomatoes, char them along with the onion, garlic, and jalapeño in a dry skillet or under a broiler until slightly blackened for extra smoky flavor.
Blend It Together:
Add the tomatoes, onion, garlic, jalapeño, Mole Chili Rub, smoked paprika (if using), lime juice, and salt to a blender or food processor. Blend until the salsa reaches your desired texture (chunky or smooth).
Adjust the Flavor:
Taste the salsa and add more Mole Chili Rub or lime juice if needed.
Chill & Serve:
Refrigerate for at least 15 minutes to let the flavors meld. Serve chilled or at room temperature.
