Smoky Mole Salsa

This salsa combines the rich, earthy notes of Mole Chili Rub with fresh ingredients for a unique take on classic salsa!

Ingredients:

  • 4 medium tomatoes (or 1 can of fire-roasted tomatoes, drained)

  • 1/2 medium onion, roughly chopped

  • 2 cloves garlic

  • 1 small jalapeño (seeded for less heat, optional)

  • 1 tablespoon Mole Chili Rub

  • 1/2 teaspoon smoked paprika (optional, for extra smokiness)

  • 1 tablespoon fresh lime juice

  • 1/4 cup fresh cilantro leaves

  • 1/2 teaspoon salt (or to taste)

Instructions:

Roast the Ingredients (Optional):

  • If using fresh tomatoes, char them along with the onion, garlic, and jalapeño in a dry skillet or under a broiler until slightly blackened for extra smoky flavor.

  • Blend It Together:

    • Add the tomatoes, onion, garlic, jalapeño, Mole Chili Rub, smoked paprika (if using), lime juice, and salt to a blender or food processor. Blend until the salsa reaches your desired texture (chunky or smooth).

  • Adjust the Flavor:

    • Taste the salsa and add more Mole Chili Rub or lime juice if needed.

  • Chill & Serve:

    • Refrigerate for at least 15 minutes to let the flavors meld. Serve chilled or at room temperature.

Serving Suggestions:

  • Pair with tortilla chips for a crowd-pleasing dip.

  • Spoon over tacos, burrito bowls, or grilled meats for a smoky twist.

  • Use as a topping for scrambled eggs or avocado toast.
