Everyday BBQ Rub Chicken Skewers
This dish highlights the smoky, savory goodness of your Everyday BBQ Rub while being easy to customize for any occasion.
Ingredients:
1 1/2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
2 tablespoons Everyday BBQ Rub
2 tablespoons olive oil
1 tablespoon honey (optional, for a touch of sweetness)
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
1 zucchini, sliced into thick rounds
Wooden or metal skewers
Instructions:
Prepare the Chicken Marinade:
In a large mixing bowl, combine the chicken pieces, Everyday BBQ Rub, olive oil, and honey (if using). Toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
Prep the Vegetables:
In a separate bowl, toss the bell peppers, red onion, and zucchini with a drizzle of olive oil and a pinch of Everyday BBQ Rub for extra flavor.
Assemble the Skewers:
Alternate threading the marinated chicken and vegetables onto skewers.
Cook the Skewers:
Grill Method: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 4-5 minutes per side, turning frequently, until the chicken is cooked through (internal temperature of 165°F).
Oven Method: Preheat your oven to 425°F. Place the skewers on a baking sheet lined with foil or parchment paper. Bake for 20-25 minutes, turning once, until the chicken is fully cooked.
Serve:
Remove the skewers from the grill or oven and let them rest for 5 minutes. Serve with a side of your favorite BBQ sauce, rice, or a crisp salad.
